The Commission of the Codex Alimentarius, created in 1963 by the Food and Agriculture Organization (the FAO) and the World Health Organization (WHO) to develop nutritional guidelines, works to ensure the quality and innocuity of foods and it therefore contributes to the economic and social development of countries. The rules derived from their guidelines are based on solid scientific evidence, the result of the research carried out by the researchers from the member states of these organizations. The Instrumental Sensometry research group (iSens) understands that complying with these guidelines is fundamental if food and production processes are to be improved. Therefore, it develops methods of quality control, useful for both the companies and the organizations responsible for the nutritional security and the commercial interests of producers and consumers.
